These popsicles are super simple to make and, believe it or not, healthy—consisting of peaches, maple syrup and coconut cream. They may be dairy-free, but they still taste just like peaches & cream!
First, remove the skin and seeds from the peaches. Take two and cut them into chunks, then set them aside for later.
Place the remaining peaches into a high speed blender. Add the coconut cream and the maple syrup, blending until the ingredients are combined.
Next place one peach chunk in each popsicle mold insert. Pour the blended mixture halfway into each, then add another peach chunk. Continue to pour the mixture until it reaches the top of each mold.
Now, place the silicone cover on the popsicle molds and add the wooden sticks.
Freeze overnight or until firm, 4-6 hours.

We recommend this popsicle mold, but if you don’t want to buy a mold, you can use small paper cups, like Dixie cups.Serving sizes will vary. Popsicle molds come in all shapes and sizes. We typically get 8-10 popsicles.For a stronger orange color, you can add a touch of food coloring. This recipe makes a pale pastel popsicle. If you want a stronger color, add a couple drops of orange food coloring.
